MRS. HARRIS GOES TO PARIS Inspired Recipes!
My love for Paris really began last Christmas, when we spent the holidays there. However after watching MRS. HARRIS GOES TO PARIS, I now know, it must have been absolutely magical in the 1950’s! Something enchanting occurs when watching Mrs. Harris being unapologetically herself, her pure innocence mixed with fun and flare is intoxicating.
She inspired me during the dinner scene, how she naturally made an authentic French meal and it got me thinking, I want to create a meal to bring friends and family together. But what could I possibly make for my picky eater and for the entire family. After flipping through a million (it felt like that) cookbooks, yes, I’m old school, I love the feel of flipping through cook book pages. I found a few recipes that I tweaked and I’m sharing with you.
Appetizer:
We always need salad, however sometimes kiddo doesn’t like a leafy salad however a traditional cucumber and tomato Parisian salad is perfect. Healthy, light and colorful.
Parisian Salad
Ingredients:
• Cucumber
• Tomatoes – pick a variety of tomatoes that are firm, not too juicy, too seedy, or over-ripe. I usually go for Roma, Campari, or salad tomatoes.
• Onion – red, white, or yellow. (Up to you if you want to use onions)
• For the dressing, use extra virgin olive oil, lemon or lime, salt, and pepper.
Cut up the cucumber, tomatoes and onions, toss it in a bowl and mix it with the dressing.
Chicken Salad
This chicken salad recipe we’ll use dried Herbs de Provence. You should have the typical mix already at home, the herbs prevalent to the Provence region of southeast France, is basil, fennel, marjoram, parsley, rosemary, lavender, tarragon, and thyme.
Ingredients:
4 cooked chicken breasts (boneless, skinless) cut in cubes or shred
Nicolas Alziari Extra Virgin Olive Oil
Kosher salt and freshly ground black pepper (2 pinches of each)
1/2 cup mayonnaise
1 1/2 tablespoons chopped fresh tarragon leaves
1 cup small-diced celery (2 stalks)
Pasta With Garlic Butter Sauce
Ingredients:
1 head sliced garlic
Kosher salt
1/2 pound your favorite pasta
1/4 cup unsalted butter
Optional: roughly chopped parsley, red pepper flakes or freshly ground black pepper, or grated parmesan for garnish.
In one pot cook your pasta, in another pan melt your butter, mix garlic, salt, pepper (if desired). Once pasta is cooked, transfer cooked pasta into pan and mix! Viola
Caprese Sandwich
Ingredients:
French baguette is perfect for this sandwich! When we were in Paris, the Caprese sandwich is what we got to eat while we were sightseeing.
You’ll need mayonnaise, fresh basil, garlic, salt, pepper and tangy balsamic vinegar for the dressing. Mix these ingredients together to create your spread. You may even add Dijon mustard if you like.
Main ingredients, Arugula, Mozzarella and Ripe Tomatoes. You could add Prosciutto and or chicken if you desired. Viola, you now have the perfect sandwich.
Salmon with grilled vegetables (air fry)
Ingredients:
* 2 wild-caught salmon fillets
* 1 tsp salt
* 1 tsp black pepper
* 3 tbsp lime juice
Roasted Veggies
½ yellow bell pepper
½ red bell pepper
½ seasonal cherry tomatoes
¼ purple onion
½ fingerling potatoes,
½ onions
*Preheat air fryer to 400F. Cook for 35 minutes.
1. In a foiled paper add your salmon with salt, pepper and lime juice.
2. In an iron skillet add the sliced onions and cook for 3 minutes.
3. Add the sliced potatoes first, the bell peppers, very last should be tomatoes and add more salt and pepper for taste. You may also add sliced garlic, capers, red chili, and fresh Italian parsley.
4. Cook veggies for 5 minutes and turn off heat!
Once the salmon is cooked place it into the pan with the vegetables to combine the flavors.
