Mama’s as you know these past couple weeks have been crazy for me, I mean literally crazy. One of the challenges I’ve had was what was I going to cook for my little one that’s easy and healthy. One of my Mealthy MultiPot recipes, “Chicken Combo” which in reality is whatever I have in the fridge but if you ask P, the “combo” is the BEST!

Here’s the recipe:

2 cups of Saffron rice

2 Pieces of Boneless Chicken Breast (cut up in cubes)

I can of tomato sauce

½ teaspoon of salt

½ teaspoon of Ground White Pepper

1 Tablespoon of olive oil

2 cloves garlic, minced

1 package of Melissa Produce Dried Asian Mushrooms

1 bunch Melissa produce Baby Dill (de-stem)

Cook your rice in vegetable broth for flavor instead of water.

Place it all in your Mealthy MultiPot and let it cook. Run your errands, do the laundry, wash the dishes, finish your to-do list and all the while dinner is cooking.
