Happy Summer everyone! Now kick off your summer by catching an epic cruise on Friday, July 13th! Hotel Transylvania Summer Vacation is hilarious, get ready to laugh and most importantly you've got to make Guacamole with pomegranate seeds, hold the garlic, lol. Take a look at the trailer to know why Drac can't have garlic.

  • 2 avocados, ripe

  • 1/4 + 2 cup + tbsp lemon juice, fresh

  • 1 tsp pomegranate molasses (optional, see notes)

  • 1/4 cup red onion, diced

  • 1/4 cup parsley, chopped (reserve 1 tbsp for garnish)

  • 1/2 tsp salt

  • 2 dashes cumin

  • 1/4 cup sunflower seeds, or any seed (needed for crunch)

  • 1/4 cup pomegranate seeds

  • sumac (for garnish)

Super easy, you need a bowl. Peel and pit the avocado. Mash slightly (so as you add liquid ingredients the dip won't get too watery from over-mixing). Add lemon juice and pomegranate molasses, if using. Mix together until combined well. Stir in remaining ingredients and top with reserved parsley and sumac as garnish.

The pomegranate molasses added is for an interesting tangy flavor to the recipe. If you want the guacamole to be brighter add less molasses leave it out or add or add very little of it. You can add chips like I've done or add it with baked pita chips.

Pita Chip Ingredients

Baked pita is super easy to make, get a package of pita chips and cut it up to 8 triangles. Preheat oven to 400 degrees F (200 degrees C). Place them in a disposable zip lock bag and combine the oil, pepper, salt, basil and chili pepper and shake it up. Once you've mixed it all up place the triangles on lined cookie sheet, bake them in a preheated oven for about 7 minutes, or until lightly browned and crispy.
